We Review: Private Chef Kit Davis

Editor Rebecca Moore gets to sample some award-winning cooking, without having to leave her own dining table, as Cornish chef Kit Davis launches his private chef service…

It’s not often I’m cooked for by someone who has competed in Masterchef the Professionals, prepared dishes for Michel Roux Jr. and garnered numerous culinary awards in his three decades of cheffing in top-end restaurants across the country, but since launching a private chef service in Cornwall this autumn, it’s now possible to book in an evening with Kit Davis.

Cooking in Cornwall is nothing new for Kit though. Born and raised in north Cornwall, and having spent seven years at Bude’s former award-winning restaurant The Castle, and his most recent position as head chef at The Wellington in Boscastle – where he successfully held Two Rosettes for his full ten years of service – Kit knows Cornwall, and its produce, like the back of his hardworking hands. And he’s all about hands-on cooking, claiming his biggest career lesson has been to do things properly, and that comes through preparation, taking time and doing it well. And after an evening of Kit’s cooking, I concur.

Brightening up a miserable Monday evening, Kit prepared and served a delicious two-course menu for the Cornish Secrets team. The team nibbled on freshly made hunks of focaccia, dipping in classic olive oil and balsamic, while Kit seamlessly cooked our main course in the background.

Taking centre stage was a hearty chorizo cassoulet, topped with roasted Cornish hake. The dish was perfect for the time of year, packing plenty of flavour with Kit’s use of garlic, chives and lemon.

This was followed by a pudding masterpiece. As a trained pastry chef, Kit has a soft spot for sweet treats, and they don’t come much more indulgent than the chocolate tart I was served. Filled with a rich chocolate ganache, the tart was topped with pistachio, poached cherries and a sharp homemade yoghurt ice cream. Not for the fainthearted, it was a luxury dessert which more than appeased my chocolate cravings.

Having a talented Cornish chef available to cater for occasions, whether that’s a special birthday or intimate anniversary, in the comfort of your own home is an exciting prospect for those who are lucky enough to live here or simply enjoying a Cornwall holiday. We wish Kit every success in his new private chef service here in Cornwall, and look forward to trying his food again in the future.
