We review: The Cerenity Chef

The Cornish Secrets team had the absolute pleasure of being cooked the most sublime lunch by The Cerenity Chef, Caitlin.

Originating from Newport, Rhode Island, Caitlin grew up with wonderful produce from her family’s farm and got to appreciate an array of flavours from an early age. In the years following, she went on to work on super yachts and for private estates around the world, building up a host of knowledge which finally led Caitlin to relocate to the pretty town of Lostwithiel, South Cornwall. She now offers a private chef service for intimate gatherings using fresh local produce to create dishes that fuse all aspects of her culinary experiences.


Last week, Caitlin lined up a mouthwatering 5 course tasting menu to showcase to the Cornish Secrets team what she can bring to the table!

Whilst we happily asked Caitlin questions about her love of cooking and how she became a chef, she effortlessly served up the first course of tomato caprese, with a wild garlic pesto, garden basil and deliciously formed balls of mozzarella. The use of the wild garlic gave real depth to the pesto.

With so much experience cooking for so many different people, Caitlin doesn’t shy away from modifying dishes to meet any dietary needs her clients may have, ensuring that taste is never compromised.

We were delighted to be presented with the next three courses which included a silky smooth Cornish wild mushroom soup with a crispy parmesan tweel, succulent seared Cornish scallops sat on top of a butternut squash puree, white quinoa salad garnished with juicy apple and lemon zest and to top that, (if it was really possible!) lamb cutlet with wild garlic and garden herb pomme puree, harissa and honey carrots, and asparagus with a port wine jus.

Finally, to finish off an amazing lunch we were treated to a beautifully presented apple pastry rose and a deliciously creamy pot de crème made from the finest Belgium milk chocolate; it was fantastically light and airy – the perfect way to end the experience – with a side of espresso!

Caitlin tells us she’s often been asked for her recipes and does not in any way see herself as the “gatekeeper” of her recipes and therefore loves the idea of sharing them with anyone who would want to recreate one of her delicious dishes at home.
