Head Chef, Mike Francis, was originally inspired by an English GCSE exam question which included a recipe from Jamie Oliver, but he also cooked with his mum and nan. Cooking was in his blood. Leaving school, he landed a job as a commis chef at Bath’s Michelin-starred Lucknam, progressing up the ranks.

His cooking is flavoursome but refreshingly unpretentious, focusing on the wholesome array of fresh ingredients on his doorstep. He is lauded for his technical acumen in ‘letting the produce speak for itself’.
